使用操作，切辣椒安裝豎刀（參見圖）：先轉動辣椒切割機可調偏心輪，是刀架行下死點后，再使刀架向上抬起1-2毫米，使豎刀與輸送帶接觸后，緊固螺母把豎刀禁固在刀架上，（泡椒魚頭切辣椒機注：刀架抬起全自動切辣椒機高度可根據所切辣椒自行掌握。如果刀架抬起高度小，小型切辣椒機辣椒可能連刀，如果刀架抬起過大，有可能切斷輸送帶）。
